Another three large bananas lay browning in the fruit bowl today. I decided enough was enough. It was time to make another banana cake.
I’m pretty good at massacring a recipe at the best of times, but today I thought my crucial omission in this Lemony Olive Oil Banana Cake recipe would ruin the whole thing and end up wasting those bananas I so wished to resurrect.
Once the cake was in the oven and I was packing away the mess, I discovered the two eggs that were supposed to go into the cake on the bench.
Amazingly enough (probably due to the olive oil) it came out quite edible anyway. The chocolate chips and bananas were not wasted after all, and my morning tea for playgroup tomorrow was not lost. Phew…
