I’ve had a packet of coco pops in the cupboard since before xmas when I made some christmas crackle puddings and have been trying to get rid of them ever since.
Today we are going to visit a friend and wanted to make some cookies for the kids. I came across a wonderfully simple recipe and so far the results look good. This is my version:
Chocolate Crackle Cookies
Mix 2 C coco pops, 2 C SR flour, 1 C brown sugar, 1/4 C cocoa in a bowl. Add 4-6 T melted butter or margarine and 2 lightly beaten eggs. Mix until combined.
Roll balls of mixture and place 5cm apart on a lined baking tray. Press down lightly before baking in a 180 degree oven for 10 minutes.
Simple. Delicious. We’ll see what the kids’ verdict is.
