In an effort to cheer myself up after a shit of a few days (and because my mum came over for dinner) I decided to make this delicious pie for dessert:

Coconut Chocolate Pie

Mix 2 cups of desiccated coconut, 1 cup sugar and 2 eggs whites in a bowl. Press this mixture into a greased pie dish (I used a silicone one so didn’t grease it) to form the crust of the pie. Bake in a moderate oven for about 25 minutes until it starts to brown. Cool.

Meanwhile, heat 1and a quarter of a cup of cream in a saucepan until it is almost boiling. Take it off the heat and add 300g of chopped dark chocolate (I used 200g dark and 100g of white because that’s what was in the cupboard). Stir until chocolate melts and mixture becomes velvety.

Pour chocolate mixture into crust and put in the freezer for about half an hour or until the chocolate starts to set. Delicious!
