five second salad

Some days I just don’t feel like cooking. Yesterday was one of those days so I threw together this quick and delicious salad:

Throw together a rinsed can of four bean mix, 2 cups of cooked brown rice (I use that pre-cooked stuff), halved cherry tomatoes, a handful of chopped English spinach and some diced red capsicum. Dress with some extra virgin olive oil, lemon juice and salt & pepper to taste. It’s that simple. I also served it with some roasted almonds. Yum.
