OK so I’ve decided to put some recipes up that I have enjoyed. The first one is a first time one from tonight. I have bastardized the recipe to some extent (as I always do) so I’ll just list it as my own. It’s an easy and hearty meal using frozen chopped spinach with different types of cheese.
Impossible Spinach Pie
Cook Time: 35 minutes
· 1 onion, chopped
· 2 cloves garlic, minced
· 1 packet frozen chopped spinach, thawed
· 3/4 cup cottage cheese
· 1 cup grated mozarella cheese
· 1 cup milk
· 3 eggs
· 1/2 cup plain flour
· 1/4 tsp pepper
· 1/3 cup grated Parmesan cheese
· 1/8 tsp ground nutmeg
Preheat oven to 180 degrees. Grease a 9″ pie plate and set aside. Drain spinach very well in colander, using paper towels to soak up excess moisture. Heat olive oil in a large heavy skillet and cook onion and garlic until tender, about 4 minutes. Stir in drained spinach. Place spinach mixture in prepared pie plate and top with cottage cheese and mozarella cheese. In medium bowl combine milk, eggs, flour, and pepper and mix with wire whisk until smooth. Pour over cheese in pie plate and sprinkle with Parmesan cheese and nutmeg. Bake at 180 degrees for 30-35 minutes or until knife inserted in centre comes out clean. Let cool 5 minutes before slicing.
